French bread, the popular, crusty loaf consumed by millions every day is simple in nature. Its tightly controlled ingredients: fresh flour, salt and yeast in varying quantities create a thick, golden crust that crackles when squeezed. Learn how to transform these simple ingredients and a few more into delicious Pain Au Levain (sour dough bread), country bread, brioche and more. Wear a white chef's jacket, dark pants and comfortable shoes. Bring a tool kit with the following: a paring knife, chef and bread knife; peeler; spatula; dough cutter; pastry brush; thermometer; and measuring spoons. Prerequisite: CES 2187 Cooking 101: Skill Development or with instructor's approval.
