Course Description

Apples and autumn go hand and hand. Whether they are red, yellow or green each variety is not only unique in appearance, but in flavor as well. Learn what varieties are best to cook and best to bake. Discover what spices and savory ingredients are best suited in apple cooking. Become an apple aficionado! Wear a white chef's jacket, dark pants and comfortable shoes. Bring a rubber spatula; pastry brush; rolling pin; paring knife; vegetable peeler; serrated bread knife and icing spatula. No prerequisite is required. CES 2380 Pastry 101: Skill Development is strongly recommended.
