Course Description

Need more cooking help than just written instructions or YouTube videos? Learn the interactive way with a master chef. Get the answers to your cooking questions and learn to avoid cooking mistakes. After reviewing basic knife skills learn proper sauteing, braising, roasting, stir frying, grilling, stewing and moist heat cooking techniques. Discover various cooking methods for an array of cuts of meat, fish, poultry and vegetables. Bring a tool kit with the following: a paring knife, chef and bread knife; peeler; spatula; dough cutter; pastry brush; thermometer; and measuring spoons. Prerequisite: CES 2187 Cooking 101: Skill Development or with instructor's approval.
